Spanakopita Triangles - Greek Stuffed Pie

Spanakopita - Spanakopita is a Greek Pie that is stuffed with Spinach, Feta cheese and Green Onions and other herbs.

This stuffed fillo pie is so addictive . The first time i had this was at the pot luck at my office.My friend Edlira

had generously made a whole lot for all of us, because she knew all of us would go for multiple servings of these.

I have been nagging her ever since for the recipe , but it did look like something that needed a lot more detailed instruction than the

usual verbal instructions that we share. So, she documented her pictures for the recipe step by step, it was so

accurate and so useful that I thought i should go with her pictures and notes for the blog and not mine.

WARNING : Reserve it for the day of Indulgence since it has quite some ingredients

that can make you feel guilty.

So, here it is :

Serving Size - Makes 28-30

Preparation Time - 30 Min

Cooking Time - 25 Min

1. Fresh Baby Spinach - 2 Cups

2. Green onions - 3 to 4 stalks

3. Feta Cheese - 3/4 Cup**

4. Cream cheese - 1/4 Cup**

5. Sour Cream or Yogurt - 1/4 Cup**

6. Eggs / Egg Substitute - 2 to 3**

7. Fillo Pastry Sheets - 1 Pack. (1 lb or 454 g)

Herbs :

Parsley - 1/4 Cup (Freshly Chopped)

Dill - 1/4 Cup (Freshly Chopped)

Mint - 1/4 Cup (Freshly Chopped)

Salt - as per taste

Pepper - as per spice levels**

Olive Oil & Butter - For Brushing the sheets.

Method :

Preparation -

1. Chop the Spinach and Onions finely.

2. If the fillo sheets are frozen, There are two other ways to thaw it. Let thaw on kitchen counter for 5 hours, or let it thaw overnight in the refrigerator,

and then let stand on the kitchen counter for an hour or two before using it.

3. To make it eggless - combine 2 Tbsp of flaxseed meal + 6 Tbsp of water, stir it well and keep it aside.

4. Fine chop the Parsley , Dill and mint.

5. pre-heat Oven to 380 deg F.

Method :

1. In a bowl, combine the Spinach and the Onion.Mix the Cheeses, add the egg/egg substitute and sour cream/ yogurt.

2. Add all the herbs and also the salt and crushed pepper.

3. Mix all the ingredients thoroughly.

4. Mix Oilve oil and butter and place it on a pan on the stove on low heat till the butter melts and turn it off.

5. Carefully take out a pastry sheet and brush it with the Oil/Butter Mixture.

6. Fold the sheet as shown in the pic (in thirds).

7. Place a small scoop of the filling on the right end of the folded sheet.

8. Follow the pictures below to make the Spanakopita triangle with the stuffing.

9. Follow the same instructions for the rest of the sheets.

10. Grease a large baking tray with oil and butter.

11. Place the triangles carefully on to the tray and bake till it turns golden brown (25 min.)

Haa , all your kitchen will be filled with an aroma of spinach n feta and the pie - that's too tempting. it's time to Indulge !

This is best served warm all by itself ! Any dip to go with is an insult ;)

Notes :

1. The ratio of the Cream Cheese / Sour Cream can be varied / omitted according to your choice, feta would be a must though.

2. Egg substitute would be 1Tbsp Flax Seed Meal + 3 Tbsp. Water -> one Egg

3. Spinach can be substituted with cooked leeks, I haven't given a try though.

4. This is also done sometimes with a filling of tomatoes and onion + some grated parmesan.
