Spinach Feta Cornbread !!
Nothing satisfies me like an Indian breakfast but surprisingly Cornbread does.. Cornbread is a quick bread that is leavened without the yeast. I learnt this recipe from a very good friend of mine from Albania , she is an excellent cook and her recipes are always foolproof. Thanks to her for this amazing and simple recipe, this became one of the regulars in our weekly menu.
What comes out when Spinach and cheese (esply feta or goat) blend together is always heavenly.. They tend to elevate the dish that they become a part of.. The love my kids have for green fades away when it comes to food. So I try sneaking spinach n greens into as many dishes as possible.
Here is one such effort...
Recipe :
Preparation Time : 10 mts
Cooking Time : 25 - 30 mts
Ingredients :
Self Rising Corn Meal - 2 Cups.
Milk - 1 1/4 Cup
Egg Substitute - 1 Tbsp Flax Meal + 3 Tbsp Water Mixture (could be substituted with 1 egg)
Canola Oil / Vegetable Oil - 1/4 Cup
Spinach - 1 Cup roughly Chopped
Feta Cheese - 3 Tbsp
Salt - 1 tsp.
Crushed Red Peppers - 2 Tbsp (this could depend on your spice levels)
Method -
Pre-heat your oven to 400 deg F.
Heat a pan on the stove, and add the Spinach and 1 tsp. salt .Cook the Spinach for two minutes till it wilts. Keep it aside.
In a bowl add the Oil, Flax Meal Mixture and milk and stir it well.
Take the Cornmeal in another bowl and add the wet ingredients to the Corn meal.
Blend the ingredients well using a hand mixer in the lowest possible speed for two minutes. Over stirring the mixture might render the Corn bread dry.
To this batter fold in the cooked spinach and the Feta cheese. To add some heat, you could add the crushed peppers but this is optional.
Take an 8 inch square or round baking tray and grease it with oil.
Pour the batter on to the tray and place it on the top rack of the oven for 20-25 minutes, until knife inserted in it comes through dry.
And the delicious Cornbread is ready to be served...

Notes :
Cornbread is best served warm.
It can be stored in the fridge for upto one week, just heat it for a minute in microwave before serving it.
Milk can be replaced by same quantity of buttermilk and it tastes even better.
