Aloo Rajma Paratha / Potato beans stuffed flat-bread

Tell my kids beans and you can see them instantly disappear. Conceal the proteins in this Paratha / flatbread and this time, see the parathas instantly disappear :)

Parathas are stuffed flat breads made from whole wheat dough. The stuffing is typically made of potatoes or cottage cheese or cauliflower - rolled in to a flat bread and cooked on stove top, with some butter or oil. My little ones, absolute testimonies to the belief that kids are picky eaters, easily fall for these parathas. Healthier the stuffing gets, happier the mom :)
So, I tried stuffing my parathas this time with a mixture of potatoes and kidney beans,. As vegetarians kidney beans / other beans are a major source of protein for our family. If the usual rajma curry isnt interesting enough, this is another easy option
to get the kids to eat their proteins.

Recipe :
Difficulty Level : Medium
Makes : 5 Parathas
Ingredients :
Whole wheat Flour / Atta - 2 Cups.
Water - 1 Cup (to knead the dough)
oil - 1 Tbsp.
Salt - 1 tsp.
ajwain / carom seeds - 1 Tbsp. (Optional)
For the stuffing :
Medium sized potatoes (boiled and mashed.) - 2
Onion - 1/2 Cup (finely Chopped)
Kidney beans - cooked - 3/4 Cup.
Salt - To Taste
Chilli powder - 1 Tbsp.
turmeric powder - 1 tsp.
Fennel Seeds - 1 Tbsp.
Paratha masala powder - 2 Tbsp. (substitute with 1tsp Amchur + 1Tbsp coriander powder + 1 Tbsp. Cumin powder)
Oil - 2 Tbsp.
coriander leaves - 2-3 springs.
Preparation :
1. Boil the potatoes, peel the skin and mash them well.
2. soak the kidney beans for atleast 6 hours and pressure cook them until soft.
Method :
Time Taken - 10 mts for the stuffing + 10 min for kneading the dough + 5 min for each paratha.
Stuffing :
1. Heat a pan and add the oil. When the oil is hot, add the fennel seeds and let it turn golden brown.
2. Add the onions and saute till they turn traslucent, now add the mashed potatoes.
3. Add the kidney beans to this, mash it well and add the other spice powders.
4. Mix everything well on low flame for about 5 min. try to mash everything well.
5. TRansfer it to a bowl , once it cools , divide it in to 5 equal portions and set aside.

For the Parathas :
1. In a large bowl , add the wheat flour and add water to it little by little, and knead it well.
2. When it comes together well, add the oil and make it in to a soft dough.
3. Divide the dough in to five equal portions.
4. Roll the dough in to a small disc , add a scoop of the stuffing and close the dough, covering the stuffing to make a ball.
5. Flatten the stuffed ball with a rolling pin to a 5-6 inch round.
6. Heat the pan, add a Tbsp. of oil. cook until one side is done, then flip it and cook the other side too till its done.
Serve it hot with raitha and pickle.
