Veggie Puff Cups

If you are looking for a super quick appetizer for a big party and want to be certain that people talk about it,

puff cups are for you !

Fill it up with veggies or even the left-over chutney, everything compliments this crisp pastry puff cups beautifully.

I made the usual puff filling that I make with veggies once and also tried with red bell peppers chutney once, I still

cant tell which one is the winner. Here's the quick recipe of this puff pastry cups filled with veggies.

Difficulty Level - Easy

Ingredients : (Makes 24)

For the filling :

1. Potatoes - 2

2. Carrot - 2 big.

3. Beans - 4 to 5

4. Peas - 1/2 Cup

5. Onions - 1 medium.

6. Oil - 2-3 Tbsp.

7. Salt - To taste

8. Chilli powder - 1 Tbsp.

9. Coriander powder - 2 Tbsp.

10. turmeric powder - a pinch.

11. Chaat masala - 1-2 Tbsp. (according to your taste)

12. Coriander leaves - few springs (for garnish)

For the Pastry Cups :

1. Puff Pastry Cups pack - 1 (see image below)

Preparation :

Time taken : 5 mts.

1. Wash and chop all the veggies finely.

2. Pre-heat the oven to 350deg F.

Method :

For the Filling :

1. Boil the potatoes and mash them.

2. Heat a pan on the stove. Add the onions and saute till the onions turn translucent.

3. Add the carrots, beans and peas and cook for 3-4 min. Add the boiled potatoes and cook till all the veggies are done.

4. Add salt and all the spice powders and mix them well.

5. Add coriander leaves and set aside.

For the Puff Cups :

1. Take out the sheets and thaw according to package instructions.

2. Cut along the edges of the cups to get the individual cups.

3. Bake and cool the Cups according to the package directions.

3. Once the cups cool down enough to handle them , gently push the middle circle of the cups and add the filling.

4. Add as much as it takes, top it with little cheese if you like it so.

Serve the warm appetizers to your family/ guests and you'll be surprised to see how much they enjoy this quick snack.
