Cracked Wheat Tomato Pilaf

This is an ideal one pot dinner that will work great for weekday dinners.

I grew up with rice being the major staple of my diet. So now when I have drastically cut down on rice, sometimes I feel yearning for those rice varieties. This version of tomato pilaf with cracked wheat does a great job in satiating all those cravings without disturbing my low-carb diet.

I have followed the same recipe I use for tomato rice and replaced the rice with cracked wheat. Cracked wheat is a part of the whole grain family and is very rich in fiber. A very diabetic-friendly recipe , this also promotes weight loss.

HEre is the recipe :

Difficulty Level : Medium.

Ingredients :

1. Onions - 1 Big

2. Ginger garlic paste - 2 Tbsp.

3. Tomato - 8 big**

4. Cracked wheat - 2 Cups

5. Water - 4 Cups.

6. Salt - to taste

7. Chilli powder - 2 Tbsp.

8. Turmeric powder - 1/2 Tbsp.

9. Garam masala - 1 Tbsp.

10. Oil - 2 Tbsp.

Seasoning :

1. Fennel Seeds - 2 Tbsp.

2. Bay leaf - 1

3. Cloves - 2

Garnish :

Coriander leaves - few sprigs.

Preparation -

Time Taken : 5 mts.

1. Chop the onions fine.

2. Wash and chop the tomatoes also very finely.

3. Dry roast the cracked wheat for 3-4 min till nice aroma comes and set aside, this is optional but recommended.

Cooking method :

1. In a pressure cooker, add 2 Tbsp. of oil and add the items under seasoning.

2. Once the fennel seeds turn golden brown, add the onions and the ginger garlic paste and cook until the onions turn translucent and ginger garlic paste loses its raw smell.

3. Add the chopped tomatoes to this and add the salt and all the spice powders to it and cook until the tomatoes are half done.

4. Add the cracked wheat , mix wel.

5. Add water and cover it with the lid and let it go for just two whistles.

6. Garnish with coriander leaves and serve it hot with raita and pickle or any side dish.

Notes :

1.Use 1:1 ratio of water: cracked wheat if the cracked wheat is very fine. If it is coarse use 1:2 wheat : water ratio.

2. If you are not a big fan of tangy stuff, reduce the tomatoes.

3. If you want the dish do be done faster, boil the water parallely while doing the other processes, hot water expedites the cooking.
