Tortilla StirFry

A dish qualifies for an ideal weekday dinner if it gets done in no time , is healthy and ofcourse Tasty. Make this easy peasy dinner and all the above options are checked !

Perfect fit for a totally unplanned dinner or evening snack - all you need is a pack of tortillas or left over chapathis and random veggies. Just throw in all the veggies you like, season it and saute with some cut / torn tortilla piecesand we are all done. Here is the simple recipe.

Ingredients :

Whole wheat tortillas / Chapathis - 8 to 10

Vegetables**

Onions - 1 medium

Capsicum - half (any color- I used green and red)

Cabbage - half

Carrots - 2 medium.

Tomato - 1 medium

salt - to taste

chilli powder / green chilli sauce - 1 tsp.

garam masala - 1 tsp.

soy sauce - 1 tsp. (optional)

coriander powder - 1 tsp.

oil - 1 tsp.

fennel seeds - 1 tsp.

For Garnish :

curry leaves - few

coriander leaves - few sprigs.

Difficulty Level : Easy

Serves : 3-4.

Preparation :

Time : 7-8 min.

1. Make thin strips from the chapathis / tortillas.

2. Chop all the veggies in to strips too , in a long and thin fashion

Cooking Method :

Time : 5 min

1. Heat a pan on the stove and add oil.

2. Add the curry leaves and fennel seeds and let the fennel seeds turn golden brown.

3. Add the onions and suate till they turn translucent, all other veggies and cook for 2-3 min.

4. Add salt, garam masala, coriander powder, soy sauce, chilli powder/ sauce.

5. Add the cut strips of chapathis/ tortillas.

6. Mix them well and cook for 5 more min in medium flame.

Garnish with coriander leaves and serve it hot with raitha and pickle/chutney.

Notes :

1. Other veggies that are usually added for noodles like brocolli, mushroom and tofu can be added for more flavor.

2. Do not fry ythe vegetables for too long, it needs to be slightly crispy to achieve a nice taste.
