Pav Bhaji

The perfectly baked pavs with a generous dollop of butter served with the piping hot bhaji is an easy pick for anyone visiting the chat shops , the very aroma of it as you cross the shop is enough to get you craving to devour few of the pav with the bhajis !

Pav bhaji is a fast food dish from Maharashtra, consisting of a thick vegetable curry (the bhaji) usually prepared in butter and served with a soft bread roll (pav).

This version of pav bhaji is not to exactly mimic the restaurant or chat shop style bhaji but is more of a home-style version ! Yes, its an Indian dish, so there is significant difference between restaurant style and home style. :D I say this since I use a lot of veggies and have cut down a lot on the butter (yes, calories you see !! ) . This is a very easy to make and a lip smacking dish. Here is the recipe.

INGREDIENTS:

Vegetables :

Onions - 2 (Medium) Tomatoes - 4 (Big) Potatoes - 2 (Medium sized) Cauliflower florets - 1/2 Cup Peas - 1/4 Cup Capsicum - 1 small Beans - 7-8 Carrots - 2 Coriander - to Garnish , finaly chopped. Lemon - 2

Other Ingredients :

Pav Bhaji masala - 3-4 Tbsp. Butter** - 2 Tbsp. Salt - to taste Turmeric powder - 1 tsp. Ginger garlic paste - 2 Tbsp.

PREPARATION:

1. Clean the cauliflower using hot water with salt and turmeric. 2. Wash all the other veggies thoroughly and chop them fine.

METHOD:

1. In a pressure cooker , boil potatoes, beans, carrot and cauliflower for 3 whistles. 2. Once they are cooked, let them cool and mash them well and keep it aside. 3. In a pan, add the butter and once its hot add the finely chopped onions and the ginger garlic paste. 4. Once the onions turn translucent, add the finely shopped tomatoes. 5. Add salt, turmeric and the pav bhaji masala. 6. Once the tomatoes are cooked, add all the mashed vegetables and blend everything well. 7. Let it cook for 5 min and then garnish with finaly chopped coriander.

Serve the hot bhaji , with toasted pav buns, finely shopped onions and lemon and a generous dollop of butter.

Tips :

1. The generous you get with the butter, the tastier your bhaji will get :)
