Eggless Blueberry Banana Wheat Muffins !!

Gone are the days when we try to feed them all the gerbers and the formulas.
Now, they exactly know what they want and how to demand it !
One of their popular demands is 'Muffins'..
You cook, you're appreciated, it feels good...

You cook and your kids eat all that you cooked, and say its 'Yummy Mummy...' you feel overjoyed...
especially if you know it is something healthy, you feel satisfied and content !
I felt exactly the same after making these Banana BlueBerry Muffins with Whole Wheat,
I did add White flour too , since the muffins were too tough otherwise. So here's my recipe..
Ingredients (Makes 12 Muffins ):
Whole wheat Flour - 1 1/4 Cup
Flour - 1 1/4 Cup
Baking soda - 1 tsp.
Baking powder - 1 tsp.
Sugar - 1/2 Cup (Make it 3/4 Cup if you like it a little sweeter.)
Honey - 1/2 Cup
Banana - 2 ripe and Mashed.
Blue Berry - 1 Cup (Add 1/2 Cup if are not much of a blueberry fan)
Plain Greek Yogurt - 1/4 Cup (home-made yogurt works too)
Egg substitute - Yogurt - 1/3 Cup or Flax Meal - 1Tbsp + Water 3 Tbsp. Mixture or use 1 Egg
(I used yogurt)
Organic Whole Milk - 3/4 Cup.
Method :
Pre-heat the oven to 325 deg F.
Mix all the dry ingredients except sugar.
Mash the banana well, add the Yogurt and the milk and the egg substitute and mix this well, make sure there are no lumps.
Add the sugar and honey to this mixture and stir well.
Now, add the wet ingredients to the dry ingredients slowly and stir it with a hand mixer. Once all the ingredients blend well
together and are evenly mixed, fold in the blueberries. Avoid mixing it for long, since that'll render your muffin tough.
Grease the muffin trays with oil or place the muffin paper cups on your muffin tray. Divide and pour the batter equally in to the muffin tray.
It will yield 12 muffins approximately.
Once the oven is pre-heated, bake them for 30 minutes or until it is done.
Yummy Muffins are ready to be served.
Notes :
1. You could add 1 Tsp. of Cinnamon if you want.
2. Banana ChocoChip Muffins can be made by using the same recipe adding an extra ripe banana and 1 Cup of Choco Chip instead of blueberries.
