Puffed Rice Upma

Here, I am trying to come up with very easy dishes that you can make for

lunch when you're working from home and all you have is just the half an hour break before you could get back...

or for a quick dinner on a Lazy Wednesday when you just don't feel like cooking or dining out.

or a light evening snack with chai.

This is called pori upma / puffed rice upma / maramralu upma.

1 cup of this puffed rice is just about 50 calories. So this is something very light yet filling and tasty.

Bhel or Masala Puffed rice are few of the popular dishes that we make using puffed rice.

This puffed rice upma is from my mom's kitchen and is very easy to make.

Here is the recipe :

Cooking Time : 10 min

Ingredients :

Puffed Rice - 4 to 5 Cups.

Potatoes - 1 Big - finely chopped

mustard seeds - few

onions - 1 finely chopped (Optional)

ginger - a small piece - julienned

For the Seasoning :

Oil - 3 tsp

Mustard seeds -1 tsp

Urad dal - 3/4 tsp

Ground nut - 8-10 (optional)

Curry leaves - few

Cashews - (Optional)

To Grind -

Green chilli - 3 to 4 (depends on your spice levels)

Coriander leaves - 1 bunch - washed, cleaned , dried and roughly chopped.

gram dal - 1/2 Cup.

Method :

1. Soak the puffed rice in 10-12 cups of water. It tends to float on top, but once it absorbs some water,

it settles down slowly. Let it soak for at least ten minutes. Then drain it and squeeze out the water and set it aside.

2. Grind the green chilli , gram dal and corainder leaves together, make sure that the coriander is not too wet.

3. Heat oil in a pan . When it is hot, add the mustard seeds and let it splutter. Add the other items

that are listed under the Seasoning and cook for about a minute.

4. When they turn golden brown, add the ginger. If you are adding the onions, add them and fry till it turns

translucent.

5. Add the potatoes to this and fry till the potatoes are cooked, you can optionally microwave the potatoes for 2-3 minutes to expedite the cooking of potatoes.

6. Add the coriander chilli miture to this and fry for 1 min. To this add the drained puffed rice, mix it evenly and keep it covered for 4-5 min.

Serve it hot with sauce or curd.
