Spinach Baby Corn Cheese Sandwich

The classic combination of Spinach and Cheese - sandwiched between soft slices of bread and toasted on a grill for a couple of minutes - is a perfect recipe for a weekday breakfast or supper.

This can be put together with the ingredients that are mostly available in your refrigerator all the time..

Recipe :

Preparation Time : 15 mts (10 - for Pesto and 5 - for Sandwich)

For the Spinach Cilantro Almond Pesto - Refer here Spinach Pesto .

Other Ingredients :

Whole Grain Bread - 8 loaves.

American Cheese Slices - 4

Baby Corn - 1 Cup (either Canned , or Cooked Baby Corn)

Method :

1. On one of the slices, spread a generous scoop of Spinach Pesto.

2. Place the baby Corns on this spread.

3. Place the Slice of Cheese on this.

4. Place another loaf of bread on top of this.

5. Place it in the sandwich maker until the top browns and the cheese melts.

Cut it diagonally and enjoy with tomato sauce and chips.

Notes :

I used Panini Sandwich maker and it really did a great job in melting the cheese.

Baby Corn can be replaced by whole corn kernels, and Spinach Corn Cheese Sandwich tastes delicious too.
