Capsicum Stir Fry

Capsicum is always a cook's delight. Easy to clean, easy to chop and cooks real quick.

It tastes good, raw, semi-cooked or fully cooked. Easily pairs with other veggies and

doesnt fail to impress even in a dish all by itself.

Capsicum is rich in beta carotene, capsaicin and vitamins A and C, which are good for preventing

a host of diseases. This not only burns extra calories, but also energizes the metabolism. It also

has anti-oxidant and cancer-preventing properties. Essentially, it is a great Vegetable.

Here is a simple stir fry, the addition of gram flour/besan in it makes it tastes like mirchi

bhajji, and goes very well with chapathis or rice.

RECIPE :

Serves - 2 to 3 for side dish.

INGREDIENTS :

Capsicum / Green Bell Peppers - 3 (Large)

salt - as per taste

chilli powder - 1 Tbsp.

Vegetable Oil - 2 Tbsp.

Besan/ chickpea flour/ gram flour - 3/4 Cup.

Seasoning :

ajwain / carom seeds - 1 Tbsp.

curry leaves - 1 twig

Preparation :

Wash and cut the capsicum in to long and thin slices.

Method:

1. Heat oil in a non-stick or thick coated pan. add the ajwain seeds.

2. Once it turns brown, add the capsicum and fry it uncovered till it gets cooked.

3. Let any water that is left to evaporate.

4. In the meanwhile heat another small pan, add the besan/gram flour to it. Dry roast it till nice aroma comes.

5. Once the capsicum is almost cooked, add the besan to it and mix it well.

6. Sprinkle some water and cook it covered.

Serve it hot with rice or chapathis.
