Vegetable Soup

Winter is probably the best season to blog about soup, but who cares, to me it is never a bad season for a
bowl of soup. Once reserved for newborns and people whose jaws were wired shut, liquid diets can now boost
anyone’s health. This is a very easy version of vegetable soup, add in any of your favorite veggies, pressure cook
or boil them , mash them , cook them again to give a good bleand and serve it hot.
Usually if my kids have to like their food, either it has to have a generous amount of sugar or deep fried.
There is one more category that easily makes it's way in to their favorites, that is any liquid diet !
Yes, a soup or a juice or a smoothie. So, I usually try to include a home made soup in their everyday evening snack.
It does serve as a nice and healthy appetizer too in small kitty parties.
Here's the recipe.

Difficulty level : Very easy.
Ingredients :
Tomatoes - 3 big and Juicy.
Beetroot - 1 small piece.
Beans - 5-6
Carrots - 2 medium
coriander leaves - few sprigs.
Seasoning :
Salt - to taste
Pepper - to taste
Garnish (Optional)
Butter - a small cube
Croutons - 2 to 3 per cup.
Preparation :
Thoroughly wash all the vegetables. Peel the carrots and chop them roughly.
Method :
Time taken - 15-20 mts.
1. Take all the vegetables in a bowl add little water and pressure cook them until all the veggies are soft and done.
Alternatively, boil them on stove top until they are soft and done.
2. Transfer them to a blender or mixer, let them cool. Grind them to a fine paste. Take off the peel of the tomato after
its boiled, it'll separate easily.
3. Heat a pan on the stove and add this mixture to it, add salt, pepper and sufficient water to it if required
and let it boil for 5-6 min.
The soup is done. Serve it hot with butter and croutons.
Notes :
1. The same procedure with just the tomatoes gives you yummy tomato soup.
2. Beets give the nice red color to the soup so they are highly recommended to get that nice appetizing red color
